One of the items I like to pick up from Trader Joe’s is a package of their thinly sliced sirloin. It’s actually more of the chopped variety than “thinly sliced”, but it’s great to have in the fridge. It cooks up quickly, which makes me a big fan. The spice blend for this recipe is a medley of warm aromatics. And yup, there’s fenugreek in here. Just a little. I can’t get enough. The fenugreek and oregano combined give great flavor. Oregano is actually a really wonderfully nutrient-dense herb. It’s filled with antibacterial, antifungal, and anti-inflammatory properties. It’s also rich in antioxidants and a good source of vitamin K, which helps support bone health. So, add oregano to your dishes!
Serve this dish with a side salad or over a bed of cauliflower rice.
- Preheat pan over medium-high heat and combine olive oil and butter.
- Add sirloin and spices to pan and cook for 2 minutes, stirring occasionally with a wooden spoon until meat starts to brown.
- Add zucchini to pan and cook for another 8-10 minutes, stirring occasionally and scraping the bottom of the pan.
- Turn off heat once meat and zucchini have caramelized.
