When in doubt, add bacon to it. Okay, you shouldn’t always do this, but it’s a pretty good rule to live by. Guacamole is a pretty standard go-to appetizer, and it’s the perfect snacky dip for parking your pompis in front of the tv for game day. Grab some leftover bacon from breakfast, avocados, and a few other quick ingredients, and you have some culinary heaven. As we say in Spanish: órale.
The real standout for this recipe is the bacon and it’s smoky, crispy goodness. I tried out Farmland® bacon for this recipe. Farmland® bacon is slow smoked over real wood for maximum flavor. For decades, Farmland® has taken pride in perfecting their curing and smoking technique – a difference you’ll taste in every delicious bite. Delicioso. And yes, bacon is always on my modern day concessions list.
If you’re a fan of super chunky guacamole, you could just mash everything up with a fork or a potato masher. A mortar and pestle would work, too. What I like to do is whip out my BFF, the immersion blender, and blend it in pulses until I get it to the right consistency. It’s way easier than cleaning a standing blender and less labor intensive than mashing by hand. I have to save my arm strength for the actual eating, you know.
One last tip is to make sure to use fresh lime juice for this recipe. Any limes that are hard and wrinkly are going to have super bitter juice, and the bottled lime juice isn’t quite the same.

- 2 ripe avocados, halved, seeded and peeled
- 1/4 cup Farmland® bacon, chopped and cooked
- 1 Roma tomato
- 1 jalapeño
- 1/8 medium onion, diced
- 2 tbs olive oil
- 1 tbs fresh lime juice
- 1 tsp minced garlic
- 1/4 tsp cumin
- Handful cilantro
- 1 tbs Farmland® bacon, chopped and cooked
- Chopped cilantro
- In a large mixing bowl, combine all ingredients except onions and tomato. Using an immersion blender, blend ingredients until desired consistency is reached.
- Fold in onions and tomato.
- Garnish with chopped cilantro and 1 tbs Farmland® bacon.
