For the longest time, sausage seemed like the mystical unicorn of breakfast meats. How’s it made? What’s it made out of? WHERE DOES SAUSAGE COME FROM??? Well, a few years back, I remember complaining to my dad that I couldn’t find any sausage at the grocery store that didn’t have a million ingredients in it, and for the love of Mario Batali, why does it always have to have added sugar in it? My dad then made the not-obvious-at-the-time suggestion that I make my own. Gah. And I have a college degree.
So, it has taken some experimenting to figure out the spice ratio, but I’m quite happy with this mix. It’s slightly spicy, a little sweet from the fennel and cinnamon, and a bit smoky from the paprika and pepper. I added in extra thyme, because I am luuurving it lately, and that’s enough reason.
This recipe is good for 1 pound of ground meat. Try it out with ground pork, chicken, beef, etc. No more caramel coloring or other funny business in your sausage.
- Girlfriend, protect your manicure and wear disposable gloves. Easy clean-up. And yes, mix it by hand! No need to whip out any fancy kitchen contraptions unless you’re making pounds and pounds of this stuff. Put on some gloves and get a good hand/forearm workout.
- Goes without saying, but I’ll say it because I love being obvious: make sure to mix well! I dump everything in a large mixing bowl and alternate between folding/light kneading/karate chopping the meat. Do this just for a hot minute so the mixture doesn’t get too dense.
If you have the time, you can mix the spices in the meat and then refrigerate it for 30 minutes or so to let the flavors develop. Don’t have time for that nonsense? Then cook it up right away! I make 8 two-ounce patties and then throw them in the oven until they are browned and cooked through. After you try this spice blend out, you won’t want to bother going back to store-bought. Te lo prometo. I promissssse.

- 1 tsp salt
- 1 tsp dried thyme
- 1 tsp Italian seasoning
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp fennel seeds
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp cinnamon
- Stir the spices together and mix with 1 pound ground meat.
