I pretty much crave pumpkin-flavored food and beverages all year long. Oh, and peppermint, too. Basically, my circadian rhythms are set permanently on fall/winter. Nothing wrong with that, right? This recipe is so easy to throw together in the blender, and it’s filled with healthy fiber-rich ingredients including pumpkin and chia seeds. A lot of smoothie recipes will call for a banana to use as a thickener, but I love using chia seeds instead, which are great to thicken drinks, soups, sauces, etc. Using chia seeds cuts out a lot of extra sugar that you would get from a banana (around 12-16 grams) and helps to keep you full with tons of fiber and protein.
By the way, if you’re in the market for a new blender, I came across these reconditioned Vitamix blenders on Amazon for under $300! I use mine everyday, and I luuuurve it. It will break down anything and everything. It’s a destroyer. It also comes with the tamper, cookbook, and instructional DVD, and you still get the awesome 5-year warranty from Vitamix. So, basically it’s new but you pay way less, which is the way I like to shop! This would also make an amazing Christmas gift for a friend or family member.
If you’re feeling fancy, garnish your smoothie with some extra pumpkin spice or cinnamon, and throw on some crushed walnuts for some pizzazz. This recipe makes two servings, but girl, you can drink the entire thing right out of the blender. Enjoy!
