Q: What is your go-to quick meal?
A: I’ve become obsessed with omelettes lately. Besides being an obvious breakfast choice, they are perfect for those nights when you’re tired, hungry, and don’t want to pay $$$ for take-out. I love making Indian-style omelettes, because they are super low-maintenance and only require 5 minutes of cooking time. There’s no folding the omelette or cooking the veggies separately. You don’t even need a fork to eat ’em. I always have oddly-shaped bits of veggies leftover from making vegetable noodles, and these are perfect to quickly chop up or pass through a mandolin to toss into an omelette. Leftover meat? Toss that in, too. Throw whatever you want into the egg batter and then cook up your protein-packed meal. Five minutes of prep work and five minutes of cook time. Done. Time to collapse on the sofa and catch up on the new season of The Bachelorette. You deserve it, mija.
